The purpose of this study was to develop materials for a food safety and nutrition management education program aimed at single seniors assisted by a life manager through a focus group interview (FGI) and the Delphi technique. Single seniors¡¯ need for food safety and nutrition management education and program materials were decided by FGI. The program contents were determined by the Delphi technique. Program materials were developed as two types: a booklet and leaflet. First, the program booklet had two parts: food safety education and nutrition & health education. The topics of food safety education were ¡®prevention of food poisoning¡¯, ¡®food purchase¡¯, ¡®food storage¡¯, ¡®cooking preparation¡¯, ¡®cooking¡¯, and ¡®eating¡¯. Nutrition and health topics were ¡®dietary life for the elderly¡¯, ¡®blood pressure management¡¯, ¡®blood glucose¡¯, and ¡®method for food choice¡¯. Based on the results, the contents of nutrition, health, and food safety leaflet were decided as follows: (1) eat regularly; (2) eat in variety; (3) ways to drink water; (4) what is needed to be checked; (5) proper food storage; (6) always clean; (7) less salt and sugar. If these programs are implemented properly, they could provide food safety and nutrition guidelines for seniors for successful aging by maintaining their dietary lives and preventing food poisoning.
